Fairmont Taghazout Bay Inaugurates “Paper Moon”, the Renowned Milanese Restaurant, Offering an Unforgettable Culinary Experience.

As stated by Claudio Bertoni and Stefania Galligani, partners of Paper Moon, the vision established by the founders at the end of the 1970s remains the same today. The two partners are thrilled with the impact they’ve made in various culinary destinations such as London, Hong Kong, Bodrum, and Doha. The opening of Paper Moon in Taghazout Bay marks another significant milestone in this expansion journey. Founded in 1977 in the center of Milan, Paper Moon is a prominent gathering place for today’s culinary scene. Over the years, it has captured the essence of traditional Italian cuisine, adapting to modern trends, blending the taste of tradition with contemporary elegance. Now, it brings its legacy to this exceptional location on Morocco’s southern coast, enriching Fairmont Taghazout Bay‘s culinary offerings and solidifying its position as a premier culinary destination.

In addition to the gastronomic value offered by the exceptional flavors, the new venue stands out for its informal and welcoming “home away from home” atmosphere, capturing the Italian essence along with a strong desire for innovation. This opening marks the beginning of a new era for Fairmont Taghazout Bay and highlights the constant commitment and care to offer guests exceptional cuisine, as stated by Francis Desjardins, the resort’s General Manager, who is also enthusiastic about the collaboration with Paper Moon. This is certainly not the first time the hotel has boasted important collaborations and restaurants: Tapa Wine Bar, with its selection of refined and prestigious wines perfectly paired with inventive tapas and dishes inspired by Spain, Morocco, Italy, Lebanon, and Turkey; Beef & Reef, which combines and mixes products from the sea and land with its Mediterranean touch; Morimoto, led by Iron Chef Masaharu Morimoto, who blends Japanese traditions with Western techniques to offer innovative and delicious cuisine, always pushing the boundaries of culinary creativity.
