Explora I: Anthology’s first guest chef unveiled


Explora Journeys has announced that renowned Italian Chef Mauro Uliassi will curate the first extraordinary dining experience for Explora I guests as the inaugural guest chef of Anthology, one of 11 onboard dining experiences.

Guests will be able to sample the menu from the inaugural voyage on July 17 until the ship arrives in New York on September 25, 2023. Chef Mauro Uliassi, known for his innovative and creative approach to Italian cuisine, and his brigade will offer a masterful fusion of traditional and contemporary Italian cuisine, creating a unique dining experience that will satisfy all the senses.

Uliassi’s cuisine, which reflects his passion for the sea and his deep respect for the environment, celebrates the unique textures and flavors that the ocean offers, in complete harmony with Explora Journeys‘ philosophy of sustainability and culinary experiences based on local ingredients, aiming to bring the “Ocean State of Mind” to life in the culinary sphere.

Explora I‘s Anthology Restaurant is a culinary stage where guest chefs, in collaboration with Explora Journeys‘ Culinary Director Franck Garanger, curate their own menus inspired by cuisines from around the world, along with wine pairings from renowned wineries, to create an extraordinary dining experience. The elegant and sophisticated ambiance, open-air dining, soft lighting and impeccable service create an intimate and refined atmosphere.
